Some Favorite Snacks

These are great any time of the day as a snack or as breakfast / light lunch. Simple, quick, nutritious, and delicious.

1. BANANA ON TOAST

 

A childhood favorite that I didn’t grow out of 🙂 Banana is a good source of fibre, Potassium, and Manganese. Peanut butter or cottage cheese provide protein. Who said healthy cannot be delicious?

You need:  

1 small or ½ large ripe banana – thinly sliced

1 slice of wholegrain or rye bread

1 Tbsp cottage cheese (savoury version) or 1 Tbsp peanut butter (sweet version)

Cinnamon powder for sprinkling

Method:

Toast the bread so it gets crispy on top. Spread your savory or sweet option over the toast. Lay the slices of banana on top. Finish by sprinkling cinnamon over. Enjoy!

 

2. HUMMUS CRUDITES

 

I salute the person who invented Hummus. Packed with protein and good fat with a distinct flavor of tahini. It makes an amazing dip. I’m still experimenting with making hummus but luckily my local deli (Olive Branch) makes scrumptious hummus.

You need:

1-2 handful of broccoli florets or tenderstems

2 medium carrots that you can slice to smaller pieces

2 Tbsp quality hummus

 

3. YOGURT BOWL

 

Yogurt is incredible for protecting our stomach bacterial flora. At the same time it is a good source of calcium and protein. Blackberries and plum are loaded with fiber and antioxidants. Pumpkin seeds complete the benefits with healthy fats, zinc, and selenium.

You need:

1 large sweet plum – slice thinly

1 handful of blackberries – ripe and sweet

1 Tbsp pumpkin seeds

½ cup plain yogurt

1 tsp of fresh lemon juice

A touch of salt

Method:

Mix yogurt with lemon juice and salt until it’s smooth then transfer to your serving bowl. Design your fruit over. Sprinkle the seeds on top. If you like sweeter add a touch of honey. I sometimes do. 

 

Snacking is important to regulate our blood sugar level. Try to always keep basic ingredients in your fridge and pantry so you can easily make your own tasty, homemade snacks that are much more nutritious than the store-bought. They brighten up your day.
